March 26 is National Spinach Day!

This leafy green vegetable isn’t necessarily everyone’s favorite, but there’s no denying that it’s super healthy and packed with vitamins and minerals, like vitamins K, vitamin C, vitamin A, and most importantly, iron. That’s right . . . iron! The same material that nails, screws, pots, pans, and automobile parts are made from. I’m sure you can’t imagine your mom cooking up a big pot of delicious macaroni and nails for dinner, so that’s why you should eat your spinach! Not only is it tastier, it’s also easier on your teeth! So, if you want to avoid the dentist. give spinach a chance. Try it in a burrito, a smoothie, a salad, in a lasagna, or eat straight out of the can just like Popeye! Many years ago, in my family, we started having green drinks every morning. It was my grandmother that first served us this “delightful treat”. It revolutionized the way we felt. We put as much nutrition into the morning drink as we possibly can, and then everything else is a bonus.

IMMUNE BOOSTING GREEN DRINK

Chef Ani Yield: Serves 4

INGREDIENTS

  • 2 cups water
  • 1 small avocado
  • 1 lemon, peeled
  • 1/2 a European cucumber
  • 1 cup spinach
  • 1 large apple, chopped

INSTRUCTIONS

Add all ingredients to a blender and blend until smooth. Add water to make it the right consistency.
